  • 2 pounds Beef chuck roast
  • 2 tablespoons Olive oil

  • 0.5 teaspoon Black pepper
  • 1 cup Beef broth
  • 1 large Onion, sliced
  • 4 medium Carrots, cut into chunks
  • 3 Celery stalks, cut into chunks
  • 4 medium Potatoes, quartered

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, salt, and black pepper to form a paste.

Pat the beef chuck roast dry with paper towels. Generously rub the herb paste all over the surface of the beef.

In a large oven-proof pot or Dutch oven, add a bit of olive oil and heat over medium-high heat. Sear the beef on all sides until it develops a deep brown crust, about 3-4 minutes per side.
