Ingredients

  • 500 grams Mackerel fillets, skinless
  • 200 grams Firm tofu
  • 1 large Egg
  • 100 ml Coconut cream
  • 3 tablespoons Red curry paste
  • 2 tablespoons Fish sauce
  • 1 tablespoon Palm sugar
  • 1 teaspoon Shrimp paste
  • 4 leaves Kaffir lime leaves, finely sliced
  • 10 pieces Banana leaves, cut into 8-inch rectangles
  • 20 pieces Toothpicks

Directions

Step 1

Cut the mackerel fillets into chunks and place them into a food processor.

Step 2

Add the firm tofu, egg, coconut cream, red curry paste, fish sauce, palm sugar, and shrimp paste into the food processor with the fish.

Step 3

Blend the mixture until you achieve a smooth and cohesive paste.

Transfer the fish paste into a mixing bowl and fold in the finely sliced kaffir lime leaves.

Clean the banana leaves by wiping with a damp cloth, then pass over an open flame briefly to make them pliable.
