Ingredients

  • 500 grams ground mutton
  • 50 grams chickpea flour (besan)
  • 1 medium onion, finely chopped
  • 3 units garlic cloves, minced
  • 2 tablespoons fresh coriander leaves, chopped
  • 2 tablespoons fresh mint leaves, chopped
  • 2 units green chilies, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 tablespoons oil

Directions

Step 1

In a large mixing bowl, combine ground mutton with chickpea flour, chopped onion, minced garlic, chopped coriander and mint leaves, and green chilies.

Step 2

Add ground cumin, ground coriander, red chili powder, garam masala, and salt to the mixture.

Step 3

Mix everything thoroughly using your hands until ingredients are well incorporated.

Add lemon juice and mix again. If the mixture feels too sticky, you can add a little more chickpea flour.

Step 5

Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes to allow the flavors to meld.

Preheat the grill to medium-high heat or set the oven to 200°C (400°F).

After resting, take a small portion of the mixture and mold it evenly around a skewer to form a kebab shape.

Repeat with the remaining mixture.
