Ingredients

  • 150 grams all-purpose flour
  • 1 teaspoon baking powder
  • 80 grams chocolate-flavored protein powder
  • 100 grams poppy seeds
  • 100 grams caster sugar
  • 200 grams unsweetened Greek yogurt
  • 3 eggs
  • 200 milliliters whole milk
  • 1 teaspoon vanilla extract
  • 100 grams unsalted butter
  • 1 tablespoon lemon zest
  • 1 pinch pinch of salt

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch round springform pan and line the bottom with parchment paper.

Step 2

In a medium mixing bowl, sift together the all-purpose flour and baking powder. Stir in the protein powder, ensuring no lumps remain. Set aside.

Step 3

Using an electric mixer, beat the unsalted butter and caster sugar in a large bowl until pale and creamy. This should take about 3 minutes.

Step 4

Add the eggs one at a time to the butter mixture, beating well after each addition until fully incorporated.

Step 5

Mix in the vanilla extract, followed by the Greek yogurt and lemon zest.

Step 6

Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.

Step 7

Fold in the poppy seeds and a pinch of salt until evenly distributed throughout the batter.

Step 8

Pour the batter into the prepared pan and smooth the top with a spatula.

Step 9

Bake in the preheated oven for about 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 10

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully remove the springform and allow the cake to cool completely on a wire rack.

Step 11

Once cooled, slice and serve. Enjoy your high-protein Mohnkuchen as a nutritious treat!
