  • 8 large eggs

  • 1 can olive oil spray

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Spray a 12-cup muffin tin with olive oil spray to prevent sticking.

Step 3

In a large mixing bowl, whisk together the eggs, egg whites, and Greek yogurt until smooth.

Stir in the shredded cheddar cheese, chopped spinach, diced red bell pepper, diced cooked chicken breast, and chopped green onions.
