Ingredients

  • 50 grams protein powder (vanilla or chocolate)
  • 120 grams almond butter
  • 60 grams shredded unsweetened coconut
  • 60 grams honey or agave syrup
  • 30 grams coconut oil
  • 30 grams cocoa powder
  • 50 grams whole almonds
  • 100 grams dark chocolate chips
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Directions

Step 1

In a medium mixing bowl, combine the protein powder, shredded coconut, and cocoa powder. Set aside.

Step 2

In a small saucepan over low heat, melt the almond butter, coconut oil, and honey together, stirring occasionally until smooth and well-combined.

Step 3

Remove the saucepan from heat and stir in the vanilla extract and salt.

Step 4

Pour the wet ingredients over the dry ingredients in the mixing bowl and stir until the mixture is well-combined and holds together when pressed.

Step 5

Using your hands, form small, bite-sized balls from the mixture and place them on a baking sheet lined with parchment paper. Press a whole almond into the top of each ball.
