Ingredients

  • 300 g All-purpose flour
  • 3 large Eggs
  • 2 tbsp Water
  • 1 tsp Salt
  • 400 g Ground turkey breast
  • 200 g Low-fat cottage cheese
  • 200 g Frozen spinach, thawed and drained
  • 1 medium Onion, finely chopped
  • 2 Garlic cloves, minced
  • 2 tbsp Fresh parsley, chopped
  • 0.5 tsp Ground nutmeg
  • 0.5 tsp Ground black pepper
  • 1 tbsp Olive oil
  • 1 liter Chicken broth

Directions

Step 1

Start by making the dough. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the eggs and water.

Mix the dough with a fork until it starts to come together, then knead with your hands on a floured surface until smooth and elastic, about 10 minutes.

Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Bring a pot of chicken broth to a gentle simmer. Carefully place the Maultaschen in the broth.

Simmer gently for about 15-20 minutes, until the Maultaschen are cooked through and float to the top.

Step 11

Serve the Maultaschen in the broth, garnished with additional parsley if desired.
