Ingredients

  • 300 g Whole wheat flour
  • 2 large Eggs
  • 100 ml Water
  • 1 tsp Salt
  • 300 g Ground turkey breast
  • 1 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 0.5 tsp Black pepper
  • 0.5 tsp Paprika
  • 200 g Greek yogurt
  • 2 tbsp Olive oil
  • 0.5 tsp Red pepper flakes
  • 1 tsp Dried mint

Directions

Step 1

In a large bowl, combine whole wheat flour and salt. Create a well in the center and crack the eggs into it. Add the water gradually and mix the dough until it comes together. Knead for about 10 minutes until smooth. Cover and let it rest for 30 minutes.

Step 2

Meanwhile, in another bowl, combine ground turkey breast, finely chopped onion, minced garlic, black pepper, and paprika. Mix well to ensure all the ingredients are fully integrated.

Step 3

Once the dough has rested, roll it out on a floured surface until very thin, roughly 1-2 mm thickness. Cut the dough into small squares, about 4x4 cm.

Place a small spoonful of the turkey filling into the center of each square. Gather the four corners of a square to the center and pinch them together to seal the dumpling tightly.

Step 5

Bring a large pot of salted water to a boil. Gently drop the manti into the boiling water and cook until they float to the surface, approximately 10-12 minutes. Remove with a slotted spoon.

Step 6

For the sauce, heat olive oil in a pan over medium heat, add red pepper flakes and dried mint. Stir gently to combine flavors and remove from heat after 1-2 minutes.

Step 7

Serve the manti hot, topped with a generous dollop of Greek yogurt and the spicy mint oil drizzle.
