Ingredients

  • 250 grams Whole wheat macaroni
  • 500 grams Lean ground beef
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 3 units Garlic cloves, minced
  • 1 medium Red bell pepper, diced
  • 400 grams Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 250 milliliters Low-sodium beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 100 grams Spinach, chopped
  • 50 grams Grated parmesan cheese

Directions

Step 1

Bring a large pot of salted water to a boil, add the whole wheat macaroni, and cook according to the package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until it becomes translucent, about 3-4 minutes.

Step 3

Add the minced garlic and red bell pepper to the skillet and cook for another 2 minutes, stirring occasionally.

Step 4

Increase the heat to medium-high and add the lean ground beef to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.

Step 5

Once the beef is cooked, drain any excess fat from the skillet if necessary.

Step 6

Stir in the canned diced tomatoes (with their juices), tomato paste, and beef broth. Mix well to combine.

Step 7

Add the Italian seasoning, salt, and black pepper. Reduce the heat to medium and let the mixture simmer for about 10 minutes, allowing the flavors to meld together.

Step 8

Stir in the chopped spinach and cooked macaroni, mixing thoroughly to ensure the pasta is well-coated with the sauce.

Step 9

Let the mixture cook for an additional 2-3 minutes until the spinach has wilted and the dish is heated through.

Step 10

Serve the high protein macaroni and beef in bowls or on plates, garnished with grated parmesan cheese.
