Ingredients

  • 1 cup Elbow macaroni
  • 1.5 cup Cheddar cheese, shredded
  • 1 cup Cottage cheese
  • 0.5 cup Plain Greek yogurt
  • 2 large Eggs
  • 0.25 cup Parmesan cheese, grated
  • 0.25 cup Whey protein powder, unflavored
  • 0.5 cup Breadcrumbs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 0 Olive oil spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Spray a mini muffin tin with olive oil spray to prevent sticking.

Step 2

Cook the elbow macaroni in a pot of boiling salted water according to package instructions until al dente. Drain and set aside.

Step 3

In a large mixing bowl, combine the shredded cheddar cheese, cottage cheese, Greek yogurt, and eggs. Mix well until smooth and fully blended.

Step 4

Add the Parmesan cheese, whey protein powder, salt, black pepper, and paprika to the cheese mixture. Stir until all ingredients are well incorporated.

Step 5

Fold the cooked macaroni into the cheese mixture, ensuring all the pasta is evenly coated.

Step 6

In a separate bowl, mix the breadcrumbs with a small amount of the cheese mixture to create a sticky topping.

Step 7

Spoon the mac and cheese mixture into the prepared mini muffin tin, filling each cup to the top.

Step 8

Sprinkle a small amount of the breadcrumb mixture on top of each mac and cheese cup.

Step 9

Lightly spray the tops with olive oil spray to help the breadcrumbs turn golden brown.

Step 10

Bake in the preheated oven for 15-20 minutes, or until the edges are slightly crispy and the tops are golden.

Step 11

Allow the mac and cheese bites to cool for a few minutes in the tin before carefully removing them with a butter knife or a small spoon.

Step 12

Serve warm and enjoy your high protein mac and cheese bites!
