Ingredients

  • 2 pounds Boneless, skinless chicken breasts
  • 0.5 cup Lemon juice
  • 0.25 cup Olive oil
  • 4 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 10 pieces Wooden or metal skewers
  • 1 for garnish Lemon wedges

Directions

Step 1

Cut the chicken breasts into 1-inch cubes and set aside.

Step 2

In a large mixing bowl, combine lemon juice, olive oil, minced garlic, chopped parsley, dried oregano, dried thyme, salt, and black pepper to make the marinade.

Step 3

Add the chicken cubes to the marinade, tossing to coat evenly. Cover the bowl with plastic wrap or lid and refrigerate for at least 1 hour, or up to 4 hours for more flavor.

Step 4

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Step 5

Preheat your grill to medium-high heat.

Step 6

Thread marinated chicken cubes onto skewers, leaving a small gap between each piece for even cooking.

Step 7

Place the skewers on the grill and cook for 6-8 minutes on each side, or until the internal temperature of the chicken reaches 165°F (75°C) and grill marks are visible.

Step 8

Remove the skewers from the grill and let them rest for a few minutes before serving.

Step 9

Serve hot, garnished with lemon wedges for added zest.
