Ingredients

  • 100 grams whey protein powder
  • 150 grams all-purpose flour
  • 1 teaspoon baking powder
  • 100 grams unsalted butter, cold and cubed
  • 150 grams Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 150 grams sugar-free jam
  • 1 egg wash (1 egg beaten with 1 tablespoon of water)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, mix the all-purpose flour, whey protein powder, baking powder, and salt until well combined.

Step 3

Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

In a separate bowl, whisk together the Greek yogurt, egg, and vanilla extract until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and mix until a dough forms. Be careful not to overmix.

Turn the dough out onto a floured surface and knead it gently a few times until it comes together.
