Ingredients

  • 350 grams All-purpose flour
  • 50 grams Whey protein powder (unflavored or vanilla)
  • 7 grams Instant yeast
  • 60 grams Granulated sugar
  • 5 grams Salt
  • 180 milliliters Warm milk
  • 60 grams Unsalted butter (melted)
  • 1 large Egg
  • 200 grams Fresh blueberries
  • 10 grams Cornstarch
  • 5 milliliters Vanilla extract
  • 1 large Egg (for egg wash)
  • 15 grams Powdered sugar (for dusting)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, whey protein powder, instant yeast, sugar, and salt. Stir to combine the dry ingredients evenly.

Step 2

In a separate bowl, mix the warm milk, melted butter, and one egg until well combined.

Step 3

Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.

Step 4

Place the dough in a lightly greased bowl, cover with a damp kitchen towel or plastic wrap, and let it rise in a warm place for about 1-1.5 hours, or until it doubles in size.

Step 5

While the dough is rising, prepare the blueberry filling. In a small bowl, gently toss the fresh blueberries with cornstarch and vanilla extract until the berries are evenly coated.

Step 6

Once the dough has risen, punch it down to release the air. Transfer it back to a floured surface and divide it into 8 equal portions.

Step 7

Flatten each portion into a circle, approximately 10-12 cm in diameter. Place a spoonful of the blueberry mixture in the center of each circle.

Step 8

Carefully fold the edges of the dough over the filling and pinch to seal, creating a bun shape. Place each bun, seam side down, on a baking sheet lined with parchment paper.

Step 9

Preheat your oven to 180°C (350°F). While the oven is heating, cover the buns with a kitchen towel and allow them to rest for about 15 minutes.

Step 10

In a small bowl, whisk the remaining egg to make an egg wash. Brush each bun with the egg wash to ensure a glossy finish.

Step 11

Bake the buns in the preheated oven for 15-20 minutes, or until golden brown.

Step 12

Remove from the oven and let them cool slightly on a wire rack. Dust the buns with powdered sugar before serving.

Step 13

Enjoy these delicious, high-protein jagodziankas while they are still warm for the best experience.
