Ingredients

  • 4 pieces chicken breast fillets
  • 250 ml buttermilk
  • 50 g whey protein powder (unflavored)
  • 200 g all-purpose flour
  • 50 g cornstarch
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp baking powder
  • 2 large eggs
  • 100 ml water
  • 500 ml vegetable oil (for frying)

Directions

Step 1

Begin by marinating the chicken: In a large bowl, combine the chicken breast fillets and buttermilk. Cover and refrigerate for at least 2 hours, or overnight for best results.

Step 2

In a separate bowl, mix together whey protein powder, all-purpose flour, cornstarch, salt, black pepper, cayenne pepper, paprika, garlic powder, onion powder, and baking powder.

Step 3

In another bowl, whisk together the eggs and water to create an egg wash.

Step 4

Remove the marinated chicken from the refrigerator. Dredge each fillet in the flour mixture, ensuring they are fully coated.

Step 5

Dip the coated fillet into the egg wash, then return to the flour mixture for a second coating. Repeat this process for all fillets.

Step 6

In a large, deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Step 7

Carefully place the coated chicken fillets into the hot oil, cooking in batches to avoid overcrowding the pan.

Step 8

Fry each fillet for about 3-4 minutes on each side, or until golden brown and the internal temperature reaches 75°C (165°F).

Step 9

Remove the fried chicken from the oil and place on a wire rack to drain excess oil.

Step 10

Serve the high protein homemade zinger fillets hot with your favorite sides or sandwich them in a toasted bun with lettuce and sauce.
