Ingredients

  • 500 grams Greek yogurt, plain and unsweetened
  • 60 grams Vanilla protein powder
  • 60 ml Honey
  • 100 grams Chopped nuts (almonds, walnuts, or pistachios)
  • 150 grams Mixed berries (frozen or fresh)
  • 20 grams Chia seeds
  • 5 ml Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Line a 9x9 inch baking dish with parchment paper, letting it overhang the sides for easy removal of the bars.

Step 2

In a large mixing bowl, combine the Greek yogurt, vanilla protein powder, honey, and vanilla extract. Stir until smooth and fully integrated.

Step 3

Fold in the chia seeds and a pinch of salt, distributing them evenly throughout the yogurt mixture.

Step 4

Pour the yogurt mixture into the prepared baking dish, spreading it evenly with a spatula.

Step 5

Evenly distribute the chopped nuts over the yogurt mixture, pressing them in slightly so they embed into the yogurt.

Step 6

Scatter the mixed berries across the top, pressing them gently into the yogurt as well.

Step 7

Cover the dish with plastic wrap and place it in the freezer for at least 2-3 hours, or until the yogurt bars are firm and can be cut.

Step 8

Once set, lift the yogurt slab from the dish using the parchment paper overhang. Place it on a cutting board and cut into 8 even bars.

Step 9

Store the yogurt bars in an airtight container in the freezer. Let them sit at room temperature for a couple of minutes before serving to soften slightly.
