Ingredients

  • 2 pounds Turkey breast
  • 2 cups Water
  • 1 tablespoon Kosher salt
  • 1 tablespoon Brown sugar
  • 1 tablespoon Black peppercorns
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Coriander seeds
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Crushed red pepper flakes

Directions

Step 1

Start by preparing the brine. In a pot, combine water, kosher salt, brown sugar, and 1/2 tablespoon of black peppercorns. Bring the mixture to a boil.

Step 2

Once the brine reaches a boil, remove it from the heat and allow it to cool completely.

Step 3

Place the turkey breast in a shallow dish or zip-top bag and pour the cooled brine over it. Ensure the turkey is fully submerged.

Step 4

Refrigerate the turkey in the brine for at least 4 hours, or overnight for best results.

Step 5

Preheat your oven to 300°F (150°C).

Step 6

Remove the turkey from the brine and pat it dry with paper towels. Discard the brine.

Step 7

Crush the remaining black peppercorns, coriander seeds, and mustard seeds in a mortar and pestle or with a spice grinder.

Step 8

In a small bowl, combine the crushed spices with garlic powder, smoked paprika, onion powder, and red pepper flakes.

Step 9

Rub the spice mixture all over the turkey breast, ensuring it is thoroughly coated.

Step 10

Place the turkey breast on a wire rack set over a baking sheet.

Step 11

Roast the turkey in the preheated oven for 90 minutes or until the internal temperature reaches 165°F (74°C).

Step 12

Remove the turkey pastrami from the oven and let it rest for about 10 minutes before slicing.

Step 13

Slice thinly and serve as desired. Store any leftovers in an airtight container in the refrigerator for up to a week.
