Ingredients

  • 500 grams lean ground turkey
  • 1 tablespoon olive oil
  • 1 whole small onion, diced
  • 3 cloves garlic cloves, minced
  • 1 whole red bell pepper, diced
  • 1 can (400 grams) black beans, drained and rinsed
  • 1 can (400 grams) canned diced tomatoes with green chilies
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 225 grams reduced-fat cream cheese
  • 150 grams shredded reduced-fat cheddar cheese
  • 2 tablespoons sliced green onions
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

In a large skillet, heat the olive oil over medium-high heat.

Step 2

Add the diced onion and minced garlic, and sauté for 2-3 minutes until the onion becomes translucent.

Step 3

Add the ground turkey to the skillet and cook until browned, breaking it up with a spatula, about 5-7 minutes.

Step 4

Stir in the diced red bell pepper, black beans, and canned tomatoes with chilies.

Step 5

Season the mixture with chili powder, ground cumin, salt, and black pepper. Mix well and let simmer for 5 minutes.

Step 6

Reduce the heat to low and add the cream cheese. Stir continuously until the cream cheese is fully melted and the mixture becomes creamy.

Step 7

Stir in half of the shredded cheddar cheese until melted and well combined.

Step 8

Transfer the mixture to a serving dish and top with the remaining shredded cheddar cheese.

Step 9

Garnish with sliced green onions and chopped cilantro before serving.

Step 10

Serve warm with your choice of tortilla chips, crackers, or crudités.
