Ingredients

  • 3 cups rolled oats
  • 1 cup protein powder
  • 1 cup almonds, chopped

  • 0.25 cup chia seeds
  • 1 cup dried blueberries
  • 0.25 cup coconut oil, melted
  • 0.5 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the rolled oats, protein powder, chopped almonds, pumpkin seeds, and chia seeds. Stir until well mixed.

Step 3

In a separate microwavable bowl, combine the melted coconut oil, honey or maple syrup, and vanilla extract. Microwave for 15-30 seconds to ensure it is fully melted and combined.

Step 4

Pour the wet ingredients over the dry ingredients. Add the cinnamon and salt. Stir everything together until well coated and evenly mixed.
