Ingredients

  • 2 racks rack of lamb
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons fresh rosemary
  • 3 tablespoons fresh thyme
  • 3 tablespoons fresh parsley
  • 4 cloves garlic
  • 3 tablespoons Dijon mustard
  • 1 cup breadcrumbs

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Season the racks of lamb generously with salt and black pepper on both sides.

Step 3

Heat olive oil in a large ovenproof skillet over medium-high heat.

Sear the lamb racks on all sides until they are browned, about 3 to 4 minutes per side.
