  • 2 pounds venison stew meat
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 medium potatoes, diced
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup peas, frozen
  • 1 cup cooked quinoa

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the venison pieces and brown them on all sides, working in batches if necessary. Remove the venison from the pot and set aside.

Step 3

In the same pot, add the chopped onion and sauté until translucent, about 5 minutes.

Step 4

Add the minced garlic and cook for another 1-2 minutes until fragrant.

Add the sliced carrots, celery, and diced potatoes to the pot. Stir and cook for about 5 minutes.

Adjust seasoning with additional salt and pepper if needed. Remove the bay leaf before serving.
