Ingredients

  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 1 medium zucchini, diced
  • 28 ounces canned diced tomatoes
  • 6 cups vegetable broth
  • 1 tablespoon italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 cups kale, chopped
  • 15 ounces canned chickpeas, drained and rinsed
  • 1.5 cups whole wheat elbow pasta
  • 0.5 cup parmesan cheese, grated

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the diced zucchini to the pot and continue to sauté for an additional 2-3 minutes.
