  • 1 pound chicken sausage
  • 1 large onion, diced
  • 3 medium carrots, sliced
  • 3 medium celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 medium zucchini, diced
  • 4 cups kale, chopped
  • 14.5 ounces canned diced tomatoes
  • 6 cups low-sodium chicken broth
  • 15 ounces cannellini beans, drained and rinsed
  • 2 pieces bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the chicken sausage and cook until browned, about 6 minutes, breaking it up as it cooks.

Step 2

Remove the sausage from the pot and set aside. In the same pot, add the diced onion, sliced carrots, and sliced celery. Sauté for about 5 minutes, or until the vegetables begin to soften.
