  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large onion, chopped
  • 2 medium carrots, sliced
  • 2 medium celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 14.5 ounces canned diced tomatoes
  • 10 ounces fresh or frozen cheese tortellini
  • 3 cups fresh spinach, roughly chopped
  • 0.5 cup parmesan cheese, grated
  • 0.25 cup fresh basil, chopped

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot over medium-high heat.

Step 2

Season the chicken breasts with salt and black pepper. Cook in the pot until browned, about 5 minutes per side. Remove and set aside.

Step 3

In the same pot, add chopped onion, sliced carrots, and sliced celery. Sauté for about 5 minutes, or until the vegetables start to soften.

Step 4

Add the minced garlic and sauté for an additional 1 minute until fragrant.

Step 5

Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.

Step 6

Stir in dried thyme, dried basil, and canned diced tomatoes with their juice.

Return the chicken breasts to the pot, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

Remove the chicken breasts again and shred them with two forks.

Add the shredded chicken, cheese tortellini, and spinach back into the pot. Cook until tortellini is soft and tender, according to package instructions.
