  • 2 pounds beef chuck, trimmed and cut into 1-inch pieces

  • 3 medium carrots, sliced
  • 3 stalks celery stalks, sliced
  • 3 medium potatoes, peeled and cubed
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup peas, frozen
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot over medium-high heat.

Add the beef chunks in batches, browning all sides well. Remove and set aside.

In the same pot, reduce heat to medium and add the remaining tablespoon of olive oil.

Sauté the onion until translucent, about 5 minutes. Then add the garlic and cook for another 1 minute.
