Ingredients

  • 3 cloves garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 pound baby potatoes, quartered
  • 14.5 ounces canned diced tomatoes
  • 1 tablespoon fresh thyme
  • 2 units bay leaves
  • 1 cup frozen peas
  • 1 cup cooked quinoa
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Cut the chicken breasts into 1-inch cubes. Season them with half of the salt and pepper.

Step 2

Heat the olive oil in a large pot over medium-high heat. Add the chicken pieces and brown on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

Step 3

In the same pot, add the finely chopped onion, sliced carrots, and celery. Sauté for about 5 minutes until the vegetables are slightly softened.
