Ingredients

  • 1 large whole wheat tortilla
  • 2 large eggs
  • 100 grams cooked chicken breast
  • 60 grams black beans
  • 30 grams baby spinach
  • 30 grams low-fat cheddar cheese
  • 0.5 medium avocado
  • 1 teaspoon olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons salsa

Directions

Step 1

Heat a non-stick skillet over medium heat and add olive oil.

In a bowl, beat the eggs with a pinch of salt and pepper, then pour them into the skillet. Scramble the eggs until they are just set, then remove from the skillet and set aside.

In the same skillet, add the cooked chicken breast slices to warm them slightly.
