Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 15 ounces diced tomatoes, canned
  • 4 cups beef broth
  • 15 ounces red kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium-high heat.

Step 2

Add beef cubes to the pot and sear until browned on all sides, about 5 minutes. Work in batches to avoid overcrowding the pot.

Step 3

Remove the beef and set aside. In the same pot, add the diced onion and cook until softened, about 3 minutes.

Stir in the minced garlic and cook for another minute until fragrant.

Add the sliced carrots and celery, and sauté for another 5 minutes, until they start to soften.

Return the beef to the pot, along with the diced tomatoes, beef broth, kidney beans, and black beans.
