  • 8 pieces corn tortillas
  • 1 tablespoon extra virgin olive oil
  • 1 piece jalapeño, finely chopped (optional)

Directions

Step 1

Cut the avocados in half, remove the pits, and scoop the flesh into a medium bowl. Mash the avocado with a fork until creamy but still slightly chunky.

Step 2

Add the black beans, cooked quinoa, cherry tomatoes, red onion, cilantro, and jalapeño (if using) to the bowl with the avocado. Mix everything gently to combine.
