Ingredients

  • 1 cup ricotta cheese
  • 1 cup whole wheat flour
  • 0.5 cup parmesan cheese
  • 1 large egg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup protein powder
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 2 cloves garlic
  • 2 cups baby spinach
  • 0.125 teaspoon nutmeg

Directions

Step 1

In a large mixing bowl, combine ricotta cheese, whole wheat flour, parmesan cheese, egg, salt, black pepper, and protein powder. Mix until a dough forms.

Step 2

Lightly flour a clean work surface, and transfer the dough onto it. Knead gently until smooth, being careful not to overwork the dough.

Step 3

Divide the dough into 4 equal portions. Roll each portion into a long rope, about 1/2 inch in diameter. Use a knife to cut each rope into 1-inch pieces.

Step 4

Bring a large pot of salted water to a boil. Carefully drop the gnocchi pieces into the boiling water, cooking them in batches. They are ready when they float to the surface, which should take about 2-3 minutes. Use a slotted spoon to transfer them to a plate.

Step 5

In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Step 6

Pour in the heavy cream and bring to a gentle simmer. Stir in the nutmeg and add the baby spinach, cooking until wilted.

Step 7

Add the cooked gnocchi to the skillet and gently toss to coat evenly with the cream sauce.

Step 8

Serve immediately, garnished with extra parmesan cheese if desired.
