Ingredients

  • 250 grams glutinous rice flour
  • 200 ml warm water
  • 150 grams silken tofu
  • 50 grams protein powder (unflavored or vanilla)
  • 50 grams powdered peanuts or almond flour
  • 2 tablespoons honey or maple syrup
  • 30 grams sesame seeds
  • 30 grams fresh ginger
  • 1 liter water (for soup)
  • 50 grams brown sugar

Directions

Step 1

In a mixing bowl, combine the glutinous rice flour with 200 ml warm water. Knead the mixture into a smooth, pliable dough. Cover and set it aside to rest.

Step 2

In a food processor, blend the silken tofu, protein powder, powdered peanuts, honey or maple syrup, and sesame seeds until a smooth paste is formed. Adjust sweetness to taste if necessary.

Step 3

Divide the dough into 24 equal portions. Roll each into a small ball and then flatten slightly.

Step 4

Place 1 teaspoon of the tofu filling in the center of each flattened dough piece. Carefully wrap the dough around the filling and seal it well by rolling it into a smooth ball again. Repeat with the remaining dough and filling.

Step 5

In a saucepan, bring 1 liter of water to a boil and add the fresh ginger slices. Let the ginger steep for about 5 minutes to infuse the flavor.

Step 6

Add the brown sugar to the ginger water and stir until dissolved, creating your sweet soup base. Adjust sweetness if necessary.

Step 7

In another pot of boiling water, gently drop the prepared rice balls. Stir gently to prevent sticking. Cook for approximately 5-7 minutes or until the rice balls float to the surface.

Step 8

Transfer the cooked rice balls to the ginger-infused syrup and let them soak for a few minutes to absorb the flavors.

Step 9

Serve the glutinous rice balls hot, with a generous ladle of ginger-infused sweet soup.
