Ingredients

  • 150 grams hazelnuts
  • 60 grams whey protein powder (vanilla flavor)
  • 240 milliliters unsweetened almond milk
  • 30 grams honey
  • 4 large egg whites
  • 1 teaspoon vanilla extract
  • 2 gelatin sheets
  • 60 milliliters water
  • 50 grams dark chocolate (70% cocoa, chopped)

Directions

Step 1

Preheat your oven to 350°F (175°C). Spread the hazelnuts on a baking sheet and roast them for about 10 minutes, or until they are golden brown and fragrant. Let them cool slightly before rubbing them in a clean kitchen towel to remove the skins.

Step 2

Once the hazelnuts are peeled, transfer them to a food processor and blend until you get a smooth paste, approximately 5 minutes.

Step 3

In a small bowl, combine the gelatin sheets and water. Allow the gelatin to soak for about 5 minutes.

Step 4

In a saucepan over medium heat, combine the almond milk, vanilla extract, and honey. Stir well and heat until the mixture is just about to simmer. Remove the pan from the heat and add the soaked gelatin, stirring until completely dissolved.

Step 5

Gradually add the warm almond milk mixture to the hazelnut paste in the food processor, along with the whey protein powder. Blend until well combined and smooth.

Step 6

In a clean mixing bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the hazelnut mixture, being careful not to deflate the egg whites.

Step 7

Pour the mixture into serving glasses or ramekins and refrigerate for at least 4 hours or until set.

Step 8

Before serving, melt the dark chocolate in a heatproof bowl set over a pot of simmering water, stirring until smooth. Drizzle the melted chocolate over the top of each mousse and let it set for a few minutes before serving.
