In a small saucepan, warm the milk to about 37°C (98°F). Crumble the yeast into a bowl, add the sugar, and pour the warm milk over it. Stir until the yeast is dissolved.
In a large mixing bowl, combine the all-purpose flour, whole wheat flour, whey protein powder, and salt.
Melt the butter in a saucepan over low heat. Once melted, let it cool slightly.
Create a well in the center of the dry ingredients and pour in the milk mixture, melted butter, and crack the egg.
Using a wooden spoon, combine the ingredients until they start forming a dough. Turn the dough onto a lightly floured surface and knead for about 10 minutes until smooth and elastic.
Transfer the dough to a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Punch down the dough and roll it out on a floured surface into a rectangular shape, approximately 30x40 cm.

Starting from the long side, carefully roll the dough into a log. Use a sharp knife to cut the log into 16 equal slices.
Place the slices on a baking sheet lined with parchment paper, cover with a cloth, and let them rise for another 30 minutes.
Preheat the oven to 200°C (390°F).
Brush each bun lightly with egg yolk. Bake in the preheated oven for 15-20 minutes or until golden brown.
Remove from the oven and let them cool slightly before serving. Enjoy your high protein gifflar warm or at room temperature.
