Ingredients

  • 2 cups brown rice
  • 4 links chicken sausage
  • 3 large eggs
  • 1 cup frozen peas
  • 1 large carrot
  • 3 stalks green onions
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic
  • 1 inch piece ginger
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Cook the brown rice according to package instructions, then spread it out on a baking sheet to cool and dry slightly.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Add the chicken sausage links and cook for 6-8 minutes until browned and cooked through. Remove from the skillet and slice into rounds.

In the same skillet, add the remaining olive oil and the sesame oil.

Add minced garlic and grated ginger, stir for about 1 minute until fragrant.
