Ingredients

  • 500 grams Russet potatoes
  • 100 grams Chickpea flour
  • 50 grams Whey protein powder (unflavored)
  • 50 grams Parmesan cheese, grated
  • 2 large Eggs, beaten
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 20 grams Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 100 milliliters Olive oil

Directions

Step 1

Peel the potatoes and cut them into chunks. Boil in salted water for about 15-20 minutes or until tender. Drain well and mash until smooth.

Step 2

While the potatoes are cooking, heat a tablespoon of olive oil in a skillet over medium heat. Sauté the onions and garlic until they are translucent, about 3-4 minutes.

Step 3

In a large bowl, combine the mashed potatoes, sautéed onions and garlic, chickpea flour, whey protein powder, grated Parmesan, beaten eggs, chopped parsley, salt, black pepper, and paprika. Mix until well combined, forming a dough-like mixture.

Step 4

Shape the mixture into small oval or round croquettes using your hands. Ensure they are compact to avoid breaking during frying.

Step 5

Heat the remaining olive oil in a frying pan over medium heat. Carefully place the croquettes into the pan, being cautious not to overcrowd.

Step 6

Fry the croquettes for about 3-4 minutes on each side or until they are golden brown and crispy. Remove from the pan and drain on a paper towel to remove excess oil.

Step 7

Serve the croquettes hot, as a delicious high-protein snack or side dish.
