Ingredients

  • 1 cup Ricotta cheese
  • 3 large Eggs
  • 0.75 cup Milk
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 cup Whey protein powder
  • 2 tablespoons Sugar
  • 0.25 teaspoon Salt
  • 2 tablespoons Butter
  • 0 Cooking oil spray

Directions

Step 1

In a large mixing bowl, whisk together the ricotta cheese, eggs, milk, and vanilla extract until well combined and smooth.

Step 2

In another bowl, sift together the all-purpose flour, baking powder, whey protein powder, sugar, and salt.

Step 3

Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix as this can result in tough pancakes.

Step 4

Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking oil spray.

Step 5

Drop about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles appear on the surface and the edges look set, about 2 to 3 minutes.

Step 6

Flip the pancake and cook the other side until golden brown, approximately another 2 minutes.

Step 7

Remove pancakes from the skillet and keep warm. Repeat with the remaining batter, adding oil spray as needed.

Step 8

Serve the pancakes hot, topped with your favorite toppings such as fresh berries, maple syrup, or a dollop of Greek yogurt for an extra protein boost.
