Ingredients

  • 250 grams All-purpose flour
  • 100 grams Whole wheat flour
  • 50 grams Whey protein isolate
  • 1 packet Instant yeast
  • 200 milliliters Warm water
  • 3 tablespoons Olive oil
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 100 grams Greek yogurt
  • 1 Egg
  • 2 tablespoons Sesame seeds

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, and whey protein isolate. Stir in the instant yeast and salt until evenly mixed.

Step 2

In a separate bowl, whisk together the warm water, honey, and olive oil.

Step 3

Gradually pour the wet ingredients into the dry ingredients, mixing with a wooden spoon or your hands until a dough forms.

Step 4

Add the Greek yogurt and the egg to the dough mixture. Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.

Step 5

Place the dough back into the bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Step 6

Preheat the oven to 220°C (430°F) and line a baking sheet with parchment paper.

Step 7

Once the dough has risen, punch it down gently and divide it into 6 equal pieces.

Step 8

Roll each piece into a small round or oval shape, about 1 cm thick, and place them on the prepared baking sheet.

Step 9

Brush the tops of each flatbread with a bit more olive oil and sprinkle sesame seeds evenly over each one.

Step 10

Bake the fladenbrot in the preheated oven for 12-15 minutes, or until they are golden brown and cooked through.

Step 11

Remove from the oven and let cool on a wire rack. Serve warm or at room temperature.
