Ingredients

  • 12 oz Fettuccine pasta
  • 1 lb Large shrimp, peeled and deveined
  • 2 tbsp Olive oil
  • 4 cloves Garlic, minced
  • 8 oz Low-fat cream cheese
  • 1 cup Skim milk
  • 1 cup Parmesan cheese, grated
  • 2 cups Baby spinach leaves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Lemon juice
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, then drain and set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Step 3

Add the shrimp to the skillet. Cook for about 2-3 minutes on each side, until the shrimp are pink and opaque in the center. Remove the shrimp from the skillet and set aside.
