Ingredients

  • 12 oz fettuccine pasta
  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 4 tbsp unsalted butter
  • 1.5 cups heavy cream
  • 1.5 cups Parmesan cheese, grated
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 0.25 tsp red pepper flakes

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package directions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.

Step 2

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Season the chicken breasts with salt, pepper, and garlic powder.

Add the chicken to the skillet and cook for 6-7 minutes on each side or until fully cooked and no longer pink inside. Remove from skillet and let rest for a few minutes.

In the same skillet, add the remaining tablespoon of olive oil and 2 tablespoons of butter. Reduce the heat to medium.

Add the minced garlic and cook for about 1 minute, until fragrant.
