Ingredients

  • 500 g extra lean ground veal
  • 1 large egg
  • 50 g breadcrumbs
  • 30 g grated Parmesan cheese
  • 1 small finely chopped onion
  • 2 cloves minced garlic
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp water or milk

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the extra lean ground veal, egg, breadcrumbs, grated Parmesan cheese, chopped onion, minced garlic, parsley, salt, and black pepper.

Step 3

Add the water or milk to the mixture to keep the meatballs moist. Mix all the ingredients thoroughly with your hands until well combined, but do not overmix.

Step 4

Scoop about a tablespoon of the mixture and roll it into a ball using your palms. Repeat this process with the remaining mixture to form approximately 16 meatballs.

Step 5

Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the meatballs in batches to avoid overcrowding.

Step 6

Brown the meatballs on all sides. This should take about 5 minutes per batch. Transfer the browned meatballs to the prepared baking sheet.

Step 7

Place the baking sheet in the preheated oven and bake the meatballs for 15-20 minutes or until they are cooked through and reach an internal temperature of 160°F (71°C).

Remove the meatballs from the oven and let them rest for a couple of minutes before serving.
