Ingredients

  • 500 grams lean pork shoulder
  • 200 grams pork liver
  • 200 grams firm tofu
  • 500 milliliters fresh pig's blood
  • 120 milliliters vinegar
  • 30 milliliters fish sauce
  • 1 medium onion
  • 4 pieces garlic cloves
  • 3 pieces bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons cooking oil
  • 250 milliliters water
  • 1 piece green chili pepper

Directions

Step 1

Cut the pork shoulder into bite-sized cubes and chop the pork liver into small pieces. Dice the tofu into small cubes.

Step 2

In a large pot, heat the cooking oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.

Step 3

Add the cubed pork shoulder to the pot, and sauté until browned on all sides.

Step 4

Stir in the pork liver and continue cooking for 5 minutes.

Step 5

Pour in the vinegar and let it simmer for 5 minutes without stirring to cook off the acidity.

Step 6

Add the fish sauce, bay leaves, and ground black pepper. Stir to combine.

Step 7

Add the water and bring the mixture to a simmer. Cover and cook for about 30 minutes or until the pork is tender.

Step 8

Gently add the pig's blood while stirring continuously to prevent it from curdling. Simmer for another 10 minutes, stirring occasionally, until the blood thickens and darkens.

Step 9

Stir in the tofu and green chili pepper, and simmer for another 10 minutes. Season with salt to taste.

Step 10

Remove from heat, discard the bay leaves, and let the stew sit for a few minutes before serving.

Step 11

Serve with steamed rice or as desired.
