Ingredients

  • 2 cups Unsweetened almond milk
  • 1 cup Heavy cream
  • 150 grams Dark chocolate, chopped
  • 1 tablespoon Cocoa powder
  • 1 cup Chocolate protein powder
  • 0.5 cup Granulated sugar
  • 4 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

In a medium saucepan over medium heat, combine the almond milk and heavy cream. Heat until small bubbles form around the edges, but do not bring to a boil.

Step 2

Remove the pan from the heat and add the chopped dark chocolate. Let it sit for a minute, then whisk until the chocolate is completely melted and smooth.

Step 3

Whisk in the cocoa powder and chocolate protein powder until fully incorporated.

Step 4

In a separate bowl, whisk together the sugar and egg yolks until the mixture is pale and thick.

Step 5

Slowly pour about 1 cup of the hot chocolate mixture into the egg yolk mixture, whisking constantly to temper the eggs.

Step 6

Pour the tempered egg mixture back into the saucepan with the remaining chocolate mixture, stirring continuously.

Step 7

Place the saucepan back on the stove over medium-low heat and cook, stirring constantly with a wooden spoon, until the mixture thickens and coats the back of the spoon. Do not let it boil.

Step 8

Remove from heat and stir in the vanilla extract and salt.

Step 9

Pour the mixture through a fine-mesh sieve into a clean bowl to remove any bits of cooked egg.

Step 10

Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

Step 11

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.

Step 12

Transfer the ice cream to an airtight container and freeze for at least 2 hours before serving.
