Ingredients

  • 250 grams All-purpose flour
  • 60 grams Whey protein powder (vanilla)
  • 7 grams Instant dry yeast
  • 50 grams Granulated sugar
  • 1 teaspoon Salt
  • 180 milliliters Warm milk
  • 1 large Egg
  • 50 grams Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 250 milliliters Skim milk
  • 25 grams Cornstarch
  • 2 large Egg yolks
  • 40 grams Vanilla flavored protein powder
  • 1 teaspoon Vanilla extract (for custard)
  • 2 tablespoons Powdered sugar (for dusting)

Directions

Step 1

In a large bowl, combine the all-purpose flour, vanilla whey protein powder, instant dry yeast, granulated sugar, and salt.

Step 2

In another small bowl, whisk together the warm milk, egg, melted butter, and vanilla extract.

Step 3

Pour the wet ingredients into the dry ingredients and mix until a dough forms.

Step 4

Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.

Step 5

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 6

While the dough is rising, make the custard by whisking 50 ml of skim milk with cornstarch in a bowl until smooth.

Step 7

In a saucepan, heat the remaining skim milk until it begins to simmer.

Step 8

In a separate bowl, whisk the egg yolks with the vanilla protein powder and add to the cornstarch mixture.

Step 9

Slowly add the hot milk to the yolk mixture while whisking continuously, then pour back into the saucepan.

Step 10

Cook on low heat, stirring constantly, until the custard thickens. Stir in the vanilla extract and set aside to cool.

Step 11

After the dough has risen, punch it down and roll it out on a floured surface to about 1/2 inch thick.

Step 12

Cut out circles using a donut or biscuit cutter and place them on a baking sheet lined with parchment paper.

Step 13

Cover the circles with a damp cloth and let them rise for an additional 30 minutes.

Step 14

Preheat the oven to 375°F (190°C) and bake the donuts for 12-15 minutes or until golden brown.

Step 15

Allow the donuts to cool slightly on a wire rack.

Step 16

Fill a piping bag fitted with a small nozzle with the cooled custard.

Step 17

Insert the nozzle into the side of each donut and fill with custard until you feel resistance.

Step 18

Dust the filled donuts with powdered sugar before serving. Enjoy your high protein custard-filled delight!
