  • 2 tbsp red curry paste
  • 400 ml coconut milk
  • 1 liter chicken or vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 200 g rice noodles
  • 100 g spinach, fresh
  • 1 medium lime, juice
  • 20 g cilantro, chopped
  • 0 to taste salt
  • 0 to taste pepper

Directions

Step 1

Dice the chicken breast into bite-sized pieces and cut the tofu into cubes.

Step 2

Heat the oil in a large pot over medium heat. Add the onion and sauté until translucent.

Step 3

Add the garlic and ginger, and sauté for another 2 minutes until fragrant.

Step 4

Stir in the red curry paste and cook for 1 minute to release the flavors.

Step 5

Add the diced chicken to the pot and cook until lightly browned on all sides.
