Ingredients

  • 6 pieces Store-bought croissants
  • 100 grams Almond flour
  • 50 grams Protein powder (unflavored or vanilla)
  • 2 large Eggs
  • 100 grams Unsalted butter
  • 100 grams Granulated sugar
  • 1 teaspoon Almond extract
  • 100 milliliters Milk
  • 50 grams Sliced almonds
  • 20 grams Powdered sugar

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, cream the butter and granulated sugar together until light and fluffy.

Step 3

Add the eggs, one at a time, beating well after each addition.

Step 4

Stir in the almond extract.

Step 5

In another bowl, combine almond flour and protein powder. Gradually add this to the butter mixture, mixing until smooth.

Step 6

Slice the croissants horizontally and generously spread the almond-protein mixture inside each half.

Step 7

Dip the top of each croissant in milk, or brush milk over them, then sprinkle or press sliced almonds on top.

Step 8

Place the croissants on the prepared baking sheet and bake in the preheated oven for 13-15 minutes or until they are golden brown and the filling is set.

Step 9

Remove from oven and allow to cool slightly. Dust with powdered sugar before serving.
