Ingredients

  • 500 grams small fish (e.g., smelt or whitebait)
  • 1 teaspoon salt
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon garlic powder
  • 120 grams cornmeal
  • 80 grams all-purpose flour
  • 1 teaspoon paprika
  • 0.5 teaspoon baking powder
  • 1 large egg
  • 60 milliliters milk
  • 1 whole lemon, cut into wedges
  • 1 liter vegetable oil, for frying
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse and pat dry the small fish with paper towels to remove excess moisture.

Step 2

In a large bowl, mix together the salt, black pepper, garlic powder, cornmeal, all-purpose flour, paprika, and baking powder.

Step 3

In a separate small bowl, beat the egg and mix in the milk until combined.

Step 4

Pour the milk and egg mixture over the dry ingredients and mix until a batter forms. The batter should be thick enough to coat the fish.

Step 5

Heat the vegetable oil in a deep pan or fryer to 175°C (347°F).

Step 6

Dip each small fish into the batter, allowing any excess to drip off, and carefully place into the hot oil. Avoid overcrowding the pan.

Step 7

Fry the fish in batches until golden brown and crispy, approximately 3-4 minutes per batch.

Step 8

Use a slotted spoon to transfer the fried fish to a plate lined with paper towels to drain excess oil.

Step 9

Sprinkle chopped fresh parsley over the fried fish for garnish.

Step 10

Serve immediately with lemon wedges on the side for squeezing over the fish.
