Ingredients

  • 400 grams chickpeas
  • 100 grams quinoa
  • 1 medium onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 30 grams fresh parsley, chopped
  • 1 large egg
  • 50 grams parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 100 grams whole wheat breadcrumbs
  • 2 tablespoons olive oil
  • 500 milliliters vegetable oil, for frying

Directions

Step 1

Rinse the quinoa under cold water and cook it according to the package instructions. Set aside to cool.

Step 2

Drain and rinse the chickpeas. Pat them dry with a paper towel.

Step 3

In a food processor, combine chickpeas, cooked quinoa, onion, garlic, parsley, egg, parmesan cheese, salt, pepper, and smoked paprika. Pulse until the mixture is well combined but still slightly chunky.

Step 4

Transfer the mixture to a large bowl and stir in the breadcrumbs. The mixture should be able to hold its shape when formed into a ball. If it's too wet, add more breadcrumbs, a tablespoon at a time.

Using your hands, form the mixture into small balls, about the size of a golf ball.
