Ingredients

  • 500 grams Boneless, skinless white fish fillets (cod or haddock)
  • 240 grams Canned chickpeas, drained and rinsed
  • 2 large Eggs
  • 100 grams Panko breadcrumbs
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Lemon zest
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

In a food processor, add the white fish fillets and pulse a few times until finely chopped.

Step 3

Add the drained chickpeas to the food processor, and pulse until the mixture is combined but still has some texture.

Step 4

Transfer the fish and chickpea mixture to a large bowl.

Step 5

Add the eggs, panko breadcrumbs, chopped onion, minced garlic, parsley, lemon zest, salt, and black pepper to the bowl. Mix well until all the ingredients are combined.

Shape the mixture into 8 equal patties, approximately 2 cm (3/4 inch) thick.

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat.

Add the patties to the skillet in batches, making sure not to overcrowd. Cook for 3-4 minutes on each side until golden brown and crispy.

Transfer the browned patties to a baking sheet lined with parchment paper.
