Ingredients

  • 300 grams whole wheat pasta
  • 2 cans (approximately 150g each) canned tuna in water
  • 2 tablespoons olive oil
  • 2 units garlic cloves, minced
  • 1 medium red onion, finely chopped
  • 200 grams fresh spinach leaves
  • 150 grams cream cheese
  • 100 grams greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 50 grams parmesan cheese, grated

Directions

Step 1

Cook the whole wheat pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and chopped red onion to the skillet and sauté for about 3-4 minutes until the onion is translucent.

Step 4

Add the fresh spinach leaves to the skillet, and cook until wilted, about 2-3 minutes.

Step 5

Stir in the cream cheese and Greek yogurt, allowing it to melt and combine with the spinach and onions to create a creamy sauce.

Step 6

Reduce the heat to low, drain the canned tuna and add it to the skillet, breaking it up slightly with a fork.

Step 7

Add the cooked pasta to the skillet, tossing to coat the pasta with the creamy sauce.

Step 8

Stir in the lemon juice, and season with salt and black pepper to taste.

Step 9

Ensure the mixture is well combined and heated through, then remove from heat.

Step 10

Serve the pasta hot, garnished with grated Parmesan cheese on top.
