Ingredients

  • 10 g gelatin powder
  • 50 ml cold water

Directions

Step 1

Start by poaching the fresh tuna fillets. Place them in a saucepan, cover with water, and bring to a gentle simmer over medium heat. Cook for about 8-10 minutes or until the tuna is cooked through and flakes easily.

Step 2

Remove the tuna from the water, let it cool slightly, and then flake it into smaller pieces using a fork.

In a small bowl, sprinkle the gelatin powder over 50 ml of cold water. Let it sit for about 5 minutes to bloom.

Once bloomed, gently heat the gelatin-water mixture in the microwave or over low heat until the gelatin dissolves completely, being careful not to boil it.
