Ingredients

  • 300 grams Whole wheat penne pasta
  • 400 grams Chicken breast, boneless and skinless
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 500 milliliters Low-fat milk
  • 2 tablespoons Cornstarch
  • 50 grams Parmesan cheese, grated
  • 100 grams Frozen peas
  • 100 grams Fresh spinach leaves
  • 1 teaspoon Black pepper
  • 1 teaspoon Salt
  • 1 teaspoon Dried oregano

Directions

Step 1

Bring a large pot of salted water to a boil. Add the whole wheat penne pasta and cook according to the package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, cut the chicken breast into bite-sized pieces.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant.
